Cheese Drying  Application

Drying or dehydration is the process of removing vaporisable substances such as water from solid materials in order to slow or stop microorganism growth or chemical reactions.

In traditional drying methods, heat is gradually transferred from the surface of the dried material to the interior due to the temperature difference between the hot surface of the product and the colder interior during the drying process.

Thus, first, the surface and then the inner parts of the product are dried and the hard layer formed on the outer surface of the product due to shrinkage prevents the transfer of heat to the inner parts and the moisture inside the product to the outside of the product. In the microwave drying method, unlike traditional drying methods, since the electromagnetic field affects the material as a whole, selective heating is carried out by directly targeting the water molecules in the material. In this method, heat is generated directly in the product. The moisture in the product is evaporated by heating in very short periods of time and the moisture transfer is from inside to outside due to the vapor pressure difference in the inner and outer environment. Thus, the heat transfer problem occurring in traditional drying methods is eliminated in the microwave drying method.

Industrial microwave technology is used in many industrial processes. The cheese drying process can also be carried out with industrial microwave technology. This technology is particularly preferred to shorten the drying time and save energy. The industrial microwave cheese drying process is carried out by evaporating the moisture of the cheese using microwave energy. The microwave energy used for drying the cheese is converted into heat and evaporates the water content of the cheese. This reduces the moisture content of the cheese and makes it last longer. The industrial microwave cheese drying process is much faster than traditional drying methods. In this way, more cheese can be produced by shortening the production time. In addition, this method saves energy because less energy is consumed compared to traditional methods. The industrial microwave cheese drying process also improves the quality of the dried cheese. The cheese dried by this method has a more homogeneous structure and a better aroma and taste are obtained. As a result, industrial microwave technology is a fast, energy-efficient and high-quality method for the cheese drying process.

Advantages

Drying cheese with industrial microwave technology has many advantages. Some of them are:

  • Speed: The cheese drying process with industrial microwave technology is very fast. More cheese can be dried in less time than traditional methods.
  • Energy Saving: Microwave energy consumes less energy than conventional methods. This reduces energy costs and is a more environmentally friendly method.
  • Quality: Cheeses dried with industrial microwave technology have a more homogeneous structure and a better aroma and taste are obtained.
  • Less Harmful Substances: Industrial microwave technology reduces or completely eliminates the number of chemicals used in the drying of cheese.
  • Long Shelf Life: Cheeses dried with industrial microwave technology have a longer shelf life as they have a lower moisture level.
These advantages explain why industrial microwave technology is preferred in the cheese-drying process

Drying cheese with industrial microwave technology has many advantages. Some of them are:
